Homemade Sweetened Condensed Milk

I love sweetened condensed milk. So much so that I have been known to eat it straight from the can… I know… I know… Bad Merry.
If you do a lot of baking or creative dessert making, you can save money by making your own sweetened condensed milk, right at home. It’s quick, easy and requires ingredients that you probably have on hand.
This recipe is equivalent to one 14oz. can of sweetened condensed milk. It can be refrigerated, up to two weeks, in an air-tight container. It can be frozen, as well.
(If you do decide to freeze it, you will find the consistency will remain somewhat soft. To use, stir vogorously for two minutes and proceed with your recipe.)
1/3 cup boiling water
1/4 cup butter (soft)
3/4 cup sugar
1/2 t. vanilla (make your own)
1 cup dry skim milk
Combine water, butter, sugar and vanilla, in a heat-proof bowl. Blend with electric mixer, until well mixed. Add dry milk. Mix till smooth and thickened. Cool to room temperature. (Note: Milk will continue to thicken as it cools.)

Great! I was looking for sugar free. I wonder how it will turn out with Spenda instead of sugar. Great recipe though.
