Easy Fruit Sorbet

I love fruit sorbet. When you are in the mood for somthing light and refreshing, there’s almost nothing better!
This recipe, for Strawberry-Banana Sorbet, is very basic and super easy to prepare. It can be adapted, using many other varieties of fruit. Don’t be afraid to get creative.
Strawberry-Banana Sorbet
2 medium bananas
1 cup sliced strawberries
2 T. water
1 T. lemon juice (fresh, if possible)
whole strawberries, for garnish
Peel bananas. Cut into 1-inch slices. Line a baking sheet with wax paper. Place banana slices and whole berries on baking sheet. Freeze till completely frozen. (About 2 hours.)
In food processor, process frozen fruit, water and lemon juice until smooth. Serve immediately or freeze for up to 2 weeks. Garnish with whole berry.
To adapt recipe, substitute strawberries for equal amount of blueberries, raspberries, peaches, papaya, blackberries, etc.

You are right. This was super easy and refreshing. I live in the northern part of Sweden. Blueberries, cloudberries and raspberries aren´t ripe yet. I would like to make a cloudberry sorbet mixed with some sweeter berries or fruits. They are so special, and I don´t know if they would like any “company”.
