Copy Cat Kozy Shack Rice Pudding Recipe

Today, I was saddened to learn of the death of Vincent Gruppuso, the founder of Kozy Shack Enterprises. What is so special about Kozy Shack Enterprises, you might be wondering? I can answer that in two simple words… rice pudding.
Mr. Gruppuso first tasted this pudding in a Brooklyn delicatessen, while making his rounds as a bread delivery man. He liked it so much that he purchased the recipe from the owner and set up a small factory in Ridgewood, Queens. That was in 1967. The rest they say is rice pudding history.
Although I have not tried the following recipe, I’ve been told it’s quite close to the real thing. It’s on my list of desserts, for this week. I’m making it an honor of Mr. Gruppuco.
1 c. long grain rice (cooked
3/4 c. sugar
1/3 c. flour
1/4 tsp. salt
2 C. whole milk
3 egg yolks (beaten)
1/2 tsp. vanilla
Mix sugar, flour, salt, and milk to sauce pan. Stir over medium low heat till mixture begins to boil. Continue boiling, stirring constantly for 2 - 3 minutes. Remove from heat.
Add 1/2 cup of hot mixture to egg yolk and, mixing well. When mixed reincorporate into hot pudding mixture. Add rice and continue to cook for 2 - 3 minutes. Stir constantly to aviod lumping and pudding, which sticks to bottom of pan.
Remove from heat, add vanilla and blend well. Chill before serving. Sprinkle with cinnamon, if desired.

hmm.. try to add or change milk with coconut milk, it will be more tasty

Darn, that’s too bad to hear! I LOVE Kozy Shack pudding. I was looking at it just the other day in the store, telling myself that I really shouldn’t buy it. I managed to restrain myself, but it was hard. Next time I go to the store, I’m buying one just in memory of Vincent!

Looks like yummy but any idea about calory per serving?
